Creating the dishes as a form of stress therapy


After a long pause, today I've decided to publish my home cooked dishes...being outside of my comfort zone, forced me to cook and indeed I'm cooking for my therapy...if in Malaysia, I'd have retail therapy but here in Melbourne, with limited capacity (of course the $$$), the therapy shifted to the kitchen...sure my mum and siblings would be surprised...if last time I used to just order/cater or what so ever...tunjuk2 syndrome...now I can cook hehehe...So...here they are

After a few failed attempts...successfully presented the kerepok lekor aka kepok gotel ...hehehe
Recipe: just fish fillet (preferably mackerel (spesis ikan selar, kembong, tenggiri) or sometime people use trevally), tapioca flour and a little bit water and salt...initially I was told to use some flour too to mix with the tapioca flour... it didn't work, instead it turned into chewy dough...and the second attempt, I was so lazy to fillet the fish, I bought the fish fillet from Coles...Blue Grenadier fillet (eerrr the cheapest that time hehehe...was on offer) and my kerepok became white and tastless...later then I used mackerel..and it turned out well....cheeseeeeeeee.so moral of the story; don't be lazy and follow the recipe.

And this one is the Silver beet masak lemak cili padi (silverbeet with coconut milk and bird chilies)...rasanya macam pucuk ubi...so if I missed the pucuk ubi, I'll buy this silverbeet...the leaves are very soft...so just put it at the very last minute of cooking. Usually people do remove the stem..me too. Here is the look of these yummy silverbeet leaves

Western food
My eldest loves to eat pasta...all type except macaroni..Usually I cook bolognese Spagheti..and this time he requested lasagne...one thing I learnt...don't cut the lasagne when it is still hot...it is a mess...rather let it cool down for awhile,then only you can see the layers...and the bechamel sauce is so simple...the butter, plain flour, milk and cheese..and some seasoning too (salt, pepper etc).

My favourite potluck dish...potato scallop..an easy peasy dish...cut the potato, layer it and dust with plain flour (something I put onion (mince or slices)) and put another layers..and repeat the dusting process...continue to your prefered thickness...then pour in the milk (just to cover the layers) and sprinkle it with grated cheese...yummy...I love Australian cheese...cheddar, mozarella, parmesan or what ever...going to miss this heaven.
